Just because it has been done one way for 30 years doesn't indicate stability but stagnation. What are the odds that in 30 years a more efficient and effective method of completing a task hasn't been stumbled upon, or invented and if it hasn't doesn't that indicate a lack of forward thinking and innovation. Best line I've heard an older co-worker tell a client on the phone: "Hold on I'll just print out this email and fax it to you.."
